Hi there! I am back from my blogging hiatus. I know, I know…. It’s been a little while. But things have been *kinda* busy. I have a new baby boy named Greyson, who also goes by Grey, G2, baby doll, or sweetie pie. Greyson is completely infatuated with his big brother Grant or G1. I can already tell that these two boys are going to be a handful.
Having two kids is a mixture of fun, so much love, and an extreme amount of tiredness. The last thing I want to do when I get home from work is plan, prep, and execute a fresh healthy dinner. However, having that healthy delicious meal is possible!

I recently tried the Keto meal option from Green Chef. Opening the Green Chef box was pure joy. Not only because of the amount of food that was provided; but more importantly – the amazing ingredients: baby bok choy, riced cauliflower, mushrooms!!! Everything was organic and so fresh!

Jimmy was teaching class that evening – so it was me versus the kids. I thought – can I really get this meal done without Jimmy here to distract the kiddies? The directions say 25 minutes…. But does that really mean 25 minutes? Or does it mean 25 minutes without distractions, please add fifteen additional minutes for each child you have? Decisions, decisions…. But I decided to take a gamble and go for it.
From start to finish – it took me 30 minutes to prepare! This 30 minutes included several mom related distractions including 2 diaper changes, one episode of Mickey Mouse Clubhouse, and one sippy cup refill. Now- compared to some other meal delivery options I have tried, 30 minutes is pretty fast.
The meal was absolutely delicious and the portion sizes were great. I wish my plating skills were a little bit better – but hopefully you get the idea. I love the fact there was so much fresh veggies in this recipe – and only 450 calories!
Being able to pull off this meal in 30 minutes by myself is such a big win! Not having to spend a ton of time planning dinner, shopping for ingredients, and prepping allows me to spend even more time with the boys.
