My first zucchini was ready to be picked today! I love when my vegetables are finally ready! Everyday when I water I hunt through the plants, weeds and anything else garden related that could be found in my garden beds and hope just one vegetable will be ready to be picked- and today was the day!!
Since I only had one, mediumish sized zucchini I figured I would do a bit of experimenting and mix it up from my traditional sautéed vegetable mixture.
Tonight I decided to try out a new tool I found in my drawer. It’s a type of peeler that juliennes and comes off in noodle shape strips. You may one of these and not realize it- the blade looks like this:
After washing off my zucchini I stared “peeling” it and this was the end result:
Once I had my noodles I threw them in a small sauté pan and went to town! I added a little bit of olive oil but that really isn’t necessary since the noodles hold so much liquid themselves.
I took the Asian route for my first batch and seasoned with these below:
This really was a quick and easy dish and would be the perfect side for a chicken or steak dish!
I simply had the noodles with some brown rice!
