Wow. Week 1 of training is already over and I already missed a run. Oh well- as I stated previously I am using this plan as a guide and will try to do my best to make it happen. The plan this week called for the following:
Tuesday 1/28- 4 Miles
Thursday 1/30-4 Miles
Saturday 2/1- 4 Miles
Sunday 2/2 – 7 Miles
This is what my week looked like:
Monday I ran my #olive5k — which is a year long virtual 5k race that takes place each month. It is really cool and I am looking forward to decreasing my time each race.
Tuesday– Rest
Wednesday– I ran my first training run a day late. We were off of school due to snow so it was done on the treadmill and it seemed like it took forever!
Thursday– Spin class at the gym!
Friday– Rest
Saturday-5 Miles through the town I live in. Even though my training planned only called for 4- I went 1 extra mile to use it for the #5bythe5th virtual series I am also doing. In this series you can either do a 5k or a 5 miler before the 5th of each month. It was so nice out I even took R out for a ride in the stroller!
Sunday– 7 beautiful miles through a golf course nearby. The weather was awesome- so awesome that I wore shorts. Unfortunately the shorts were to big, so ever 20 seconds or less I had to pull them up. It was super annoying but I pushed through and did my 7 miles regardless of my drawers falling down!!!! I did take lots of pictures along the way. This is my favorite place to run. There are miles and miles of sidewalks and so many different running routes and distances you could do. I also always run past this tree you will see pictured below. Yes it is just a tree but I just love it… there is something about it. During my run today I went out to the pier and back. I hope you enjoy my “run by photo” recap below.
Since it was so nice out again today we took both kids to the playground and for a ride in the double!
So for week 2 of training here is what I have to look forward to:
Tuesday: 4 Miles
Thursday:5 Miles
Saturday: 4 Miles
Sunday: 9 Miles

Since it is Sunday and I really enjoyed making last weeks “Sunday Soup” I figured I would try it out again this week and boy am I glad I did!!! This week’s edition of Sunday Soup is Crockpot Tomato Soup! It was again so simple and very tasty! We will chow down on it for dinner tomorrow night with grilled cheese! YumM!!

Ingredients:
28 oz can of crushed tomatoes
4 Cups Chicken Broth
1 Small Can of Tomato Paste (I added this to thicken it up a little)
Oregano & Basil to your liking
1 Cup Heavy Cream
2 Tablespoons of Butter
Salt and Pepper to taste
Now let’s Make it!
Place chicken broth and crushed tomatoes in the crock pot with basil & oregano. Put on low for 6-7 hours.
(The attached recipe says to take out any tomato chunks and puree but I did not have any chunks– it may have been the brand of tomatoes I bought SCORE!)
I then added the heavy cream and butter and stirred it all up
I found that my soup was not think at all so I added a small can of tomato paste and changed my crock pot to keep warm.
I had a small bowl tonight to sample and I really liked this soup. It was more than just the soup from a can it had flavor and a great taste!!!!

can i just say how envious i am that you got to run outside in shorts? it will be weeks, maybe months, before that’s an option here. good luck on training!

We will randomly get warm days like that here in Delaware. This winter has been all over the place so some days I can run in shorts and short sleeve shirt and others I am layered up! I try to take advantage of the warm days as much as possible! Sending warm thoughts your way!
