Monday Night Mexican

I am always on the hunt for new and easy recipes and I have stumbled upon a keeper! It is easy, delicious and can be tailored to your likings!

Mexican Chicken

Ingredients:
Boneless chicken breasts or tenderloins (we used three for the two of us to eat)
Low sodium taco seasoning packet
(Optional- sour cream, shredded cheese, and taco sauce or salsa)

Steps:
Put chicken in a plastic bag and pour in the taco seasoning and SHAKE!!! Cha-cha-cha
Bake on 375 for 35 minutes and viola you have an amazing tasting Mexican chicken breast! I did spray a little non stick spray in baking dish so I didn’t have a mess to clean up.
We topped ours with the sour cream, cheese and taco sauce! So E-A-S-Y! Our side items were a salad and corn, but rice would of worked great too!

Little Reagan even got a taste and loved it! She is enjoying Mexican Monday so much she has put our tv on the musica Urbana channel and has been dancing since she got out of her highchair- never a dull moment here.

The best part of the night is that while dinner was cooking I was able to get a 2 mile sprint in on the treadmill. I am sticking to my do what you can, when you can motto and really getting after it. I am currently at 59.4 miles for the month– which means I completed 2 virtual marathons for the joggermom challenge and 428 miles for the year!! 500 is getting closer by the day! How is your running goal coming along? Still do not have one– start now!!
