Easy and Healthy Side Dish!

So it is rare when I make something healthy and easy and here is the kicker….my husband likes it! I thought I should share this easy dish! Bonus: It is very easy to clean up too


Here is what I did:

Lay aluminium foil over a cookie sheet (this helps with the easy clean up)

I cut up two onions and two zucchini and threw it in a bowl with half a container of pre-sliced mushrooms

Next I poured some extra virgin olive oil over the vegis and sprinkled some pepper and garlic salt on top (I usually use fresh garlic chopped up but just did not feel like it tonight)

I also drizzled some balsamic vinegar over the vegetables while on the tray.

I then baked it on 400 degrees for about 35 minutes. After 35 minutes I turned the oven off, took out the pan and then sprinkled some shredded mozzarella cheese on top and put it back in the over for about 5 more minutes. (You could use whatever cheese you have on hand- I just happened to have the shredded motz tonight). When you take it out of the oven the cheese is so nicely melted!

and viola! It is done and delicious! Enjoy!
